Why in this sentence is the apostrophe redundant? I don't understand when punctuation becomes redundant or not?

"... with all their E's to add colour and allow the meal to stay edible for far too long." Why is the apostrophe after this E become redundant? How does this whole punctuation redundancy work?! Thanks!
